Ingredients
1 lb ground beef
1 large onion, chopped
4 large potatoes, peeled and diced
1 can (10.5 ounces) condensed cream of mushroom soup
1 cup shredded cheddar cheese
1 can (15 ounces) whole kernel corn, drained
1/2 teaspoon garlic powder
Salt and pepper to taste
1/2 cup beef broth
Directions
1. In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is tender. Drain any excess fat.
2. Place the diced potatoes in the bottom of your slow cooker.
3. Layer the cooked beef and onion mixture over the potatoes.
4. Pour the condensed cream of mushroom soup and beef broth over the layers.
5. Add the drained corn, then sprinkle garlic powder, salt, and pepper evenly over the mixture.
6. Cover and cook on low for 6-8 hours, or until the potatoes are tender.
7. About 20 minutes before serving, sprinkle the shredded cheddar cheese on top, allowing it to melt.
8. Give everything a good stir before serving to blend the flavors well. Enjoy!
Variations & Tips
For a bit of spice, consider adding some diced green chilies or a pinch of red pepper flakes. If someone in your family isn’t a fan of mushrooms, you can use a can of cream of chicken soup instead. For vegetarians, swap out the ground beef for a plant-based alternative and use vegetable broth. Also, if you have picky eaters, try adding a handful of their favorite veggies, like peas or carrots, to the mix.
